Quinoa Tabouli

Tabouli is a fresh, delicious Middle-Eastern salad. This variation uses cooked quinoa instead of bulgur, which is a nutritious seed high in protein.



  • Cook the quinoa until soft and allow to cool.

  • Mix all the chopped ingredients together in a bowl, except the lettuce leaves.

  • Leave for at least one hour to allow the flavors to blend.

  • Spoon the mixture onto lettuce leaves and serve.
