An Avocado Salad Recipe

The addition of avocado to salads helps in the uptake of essential nutrients such as carotenoids. This is a recipe that we have tried and found to be simple, tasty and very nutritious.

Ingredients

  • Half a lime
  • One ripe avocado
  • Half a red onion, diced
  • Two medium sized tomatoes, diced in small pieces
  • Ground black pepper
  • Pickled sliced jalepenos

Preparation

Extract the juice from the lime using a fork or a spoon and put into a small mixing bowl. Add a few pinches of the ground pepper.

Cut the avocado in half, and extract all the flesh out of the avocado using a fork. Crush the flesh in the mixing bowl containing the lime so that it becomes creamy. If you wish, you can simply dice the avocado into small pieces, however it is better to crush it as this leads to better digestion and absorption.

Next add your red onions, diced tomatoes and jalapenos and mix together until it becomes uniform. You can also add other items that are rich in carotenoids such as leafy greens and carrots.

You can have this salad as an appetizer with a main meal.
